The most recent Cooks Illustrated at the library had some arresting photos of popscicles. One was strawberry, and of course Ultra Interesting to a certain individual. I love making popsicles, but don't really like eating them--they're never the right texture or melt too fast or too slow or are Wrong. I'll always try a new kind, tho, and strawberry paletas seemed quick and easy: strawbs, sugar, lemon juice, and some pulverization. I was worried they'd end up too hard, like a chunk of strawberry in ice cream or a frozen one moments before being turned into a smoothie... but after a chill I passed them to two Excited Individuals and then snuck a dadtax bite
Reader, these are the Perfect Texture and so so good!! They end up firm but easily biteable and meltable and luscious. They hold onto themselves as they melt but don't really get to that point either because they're so delightfully strawberry and just all around Ultra Tasty! I am now doing my utmost to not just eat them all every night after the kids go to bed. I want to try making some out of melon. CI has a coconut milk one and a dulce de leche one that sound super good. I will be planning on filling all our molds with strawberry as soon as they're all eaten.
