I don't think we made any maqloubeh last year, which is a shame. I wanna say I pulled this particular recipe from the cookbook Zaitoun, and its version uses eggplant, tomato, and peppers on the bottom of the pan; we usually grow these, so we have a nice summer treat when they're all available just outside in the garden. Last year, our eggplant didn't do great, and this year they did super poorly... but we picked up some eggplant because we Love this dish.

The dish is cooked and is then flipped onto a dish to serve, not unlike a pineapple upsidedown cake, which makes it quite fun. It's also ridiculously tasty.
