
I cooked this (and took the photo) on Sunday; it has been far too long since I've cooked in earnest--we've been doing a lot of simpler things, frozen things (some we prepped before baby, including a lot of our pizza doughs), etc--let alone a curry specifically[1] and it was Time. For. Curry.
I meant to post this on sunday, and remembered today because I'm having a bowl for lunch and the leftover stew effect is out in full force: this curry is so good.
there was a time I was making a curry literally every Sunday and then bringing a bowl of it to work monday. I know this because a former coworker noticed, lol ↩︎
